South Indian Sambhar

Ingredients:
  • 1/2 cup split red gram soaked in water for half an hour.
  • 2 small brinjals cut in quarters
  • 2 drumsticks cut in 4 inch sticks
  • 100 gm pumpkins
  • 4 tomatoes cut in chunks
  • 1 tbsp mustard seeds
  • 1/2 tbsp fenugreek seeds
  • 1 tbsp cumin seeds
  • 1 tbsp split black gram
  • 1/2 tbsp pepper corns
  • 1/2 tbsp split bengal gram
  • 3 tbsp corriander powder
  • 1/4 tsp asafoetida
  • 2 tsp chilli powder
  • 1/2 tsp turmeric powder
  • 1 -1/2 tsp salt
  • 6 tbsp tamarind water
Preparation method:
Roast and then in a mixer grind to a powder the mustard seeds, fenugreek seeds, cumin seeds, split black gram, pepper corn, bengal gram, coriander powder, asafoetida, chilli powder and turmeric powder to make sambhar powder.

Drain the split red gram. Put the split red gram in a vessel. then add the brinjals, drumsticks and pumpkin with 6 cups of water, cover with a lid and cook. After vegetables are partially cooked, add tomatoes, salt, tamarind water and 2 tbsp sambhar powder. Cook till vegetables are soft and then switch and then switch off. Serve hot with idlis or rice.
